About Apologetic Coffee
Apologetic Coffee started the same way a lot of good things do: with a love for coffee, a lot of conversations, and probably more cups of coffee than any reasonable person should drink in a day.
Coffee has been a real part of our lives for a long time. Not just as a morning necessity, but as something we genuinely enjoy - the smell of fresh beans, the ritual of brewing, the pause it creates in a busy day, and the way a really great cup of coffee can make everything feel just a little more manageable.
My wife Jennifer and I built Apologetic Coffee together, and it truly is a family effort. We’ve been married for 24 years, and along the way we’ve built a life centered on experience, family, hard work, and more coffee than our kitchen probably should have been asked to handle. We’re also proud parents to our three sons, Ben, Eli, and Luc, who have all had front-row seats to our ideas, experiments, and probably more coffee talk than they ever requested.
This business is personal for us. But it is also built on experience.
Before Apologetic Coffee, we owned and operated a Biggby Coffee franchise, and that gave us firsthand experience in what it takes to serve great coffee and create something people want to come back for. It taught us that coffee is not just a product. It is an experience. It is connection. It is routine, comfort, energy, conversation, and sometimes survival before 8:00 a.m.
At the same time, my professional career has been built in high-quality manufacturing and operations leadership. For years, I’ve worked in environments where consistency, precision, process, accountability, and continuous improvement are non-negotiable. In plain English: I’ve spent a big part of my career making sure things are done the right way, at a high level, and without cutting corners.
That mindset shapes everything we do at Apologetic Coffee.
We care about quality. We care about consistency. We care about freshness. We care about the details because details are what separate “pretty good” from “that’s really good.” We roast in small batches and put real thought into the coffee we offer because we believe you can taste the difference when people actually care.
